I know our default state on this site is to take a cynic view, myself include, but if we remove those for a second and look at this at a high level. Brice and Mel were friends. Mel and Serena were friends and sorority sisters. Brice got in trouble. Serena stood by him. Mel actively participated in a campaign that meant to tear down Brice without ever speaking to Brice beforehand. That's a valid gripe imo

I agree, perfectly valid gripe. The key point you neglected to mention, was when Brice and Serena started, Brice was still fiending for Mel. The only thing that stopped that, objectively, was her protesting against Brice. To me that's the bigger gripe Serena has than simply standing by her golden ticket, is that she knows if Brice had the choice back then he would have chosen Mel over her and still thinks he would (and I agree)

But (and I know Soapy originally asked to drop the cynical viewpoint), if we're keeping it a stack, Serena isn't still upset because of the principle of Mel turning on Brice. She's threatened. She sees her gravyboat slowly drifting away from her because she knows there really isn't anything concrete keeping them together. At least, that's the way I see it. Brice genuinely likes Mel a lot more than he likes Mel.

This is a fair and accurate read on both fronts. Serena shows as much when she brings up the fact that Brice is incapable of having platonic friendships. I know personally, I've had friendships that started off as failed talking stages and then eventually turned into a somewhat platonic friendship but obviously, there was romantic/sexual interest at some point. I personally ended those friendships whenever I would get into a relationship just to make it easier but if there was a stronger bond at play, such as Brice/Mel bonding over the lost of loved ones, it wouldn't be such an easy decision
